Food Hygiene

All food businesses are subject to a routine food hygiene intervention from a Food Safety Officer. Visits to premises may be carried out without any prior notification and inspections are undertaken at regular intervals, so that premises which present the greatest risks are inspected most frequently.

During an inspection, the officer will need to reassure themselves that all potential food safety risks have been identified by the business, and that adequate controls have been put in place to prevent any problems. They will also look at the training of managers and food handlers and check that the condition of the premises and equipment is satisfactory. 

Where conditions are not satisfactory, every attempt will be made to resolve the situation, but where poor conditions exist or where there is a risk to public health it may be necessary to resort to formal action.

Food Hygiene and Health & Safety Training

As the food business operator, you are more than aware that customers judge your business by the hygiene standards as well as the quality and price of the food. A knowledgeable workforce that understands the principles of food hygiene will help to maintain customer confidence and the continued long-term success of your business.

We have recently been registered as an Accredited Training Centre with Highfield Awarding Body for Compliance and have begun a full programme of certificated food hygiene and health & safety training courses. All courses are taught by fully qualified, experienced Environmental Health Officers so you can be confident that you will get quality up-to-date training, using a variety of visual aids and structured group work.

Whichever course you choose, from Foundation to Advanced level, we can adapt the syllabus to meet your needs. After all, not all food businesses are alike. 

All courses are certificated and candidates will usually be assessed by a multiple choice examination. Candidates with learning difficulties or where their first language is not English can be assessed by an oral examination (by prior arrangement) and we also make provision for candidates with a variety of special needs.

Level 2 Award in Food Safety in Catering (Basic Level)

Level 1 Award in Food Safety in Catering (Foundation Level)

This is a half-day workshop briefly covering the basic principles of food hygiene. The course is suitable for people who will be handling food commercially for the first time and for more experienced food handlers who require regular refresher training. The price per person is £30 (based on a minimum of 10 candidates) including all course materials, examination fee and certificate.

Candidates are assessed by a multiple choice examination of 30 minutes. The pass mark is 10 out of 15 and successful candidates will receive a certificate.

Level 2 Award in Food Safety in Catering (Basic Level)

This is a one day workshop covering the basic requirements for safe food handling. It is suitable for those persons who directly handle open food. The price per person is £40 (based on a minimum of 10 candidates) including all course materials, examination fee and certificate.

Candidates are assessed by a multiple choice examination of 1 hour. The pass mark is 20 out of 30 and successful candidates will receive a certificate.

Level 3 Award in Supervising Food Safety in Catering (Intermediate level)

This is a 3 day workshop designed for catering supervisors and managers who have responsibility for overseeing the catering operation. The price per person will be £180 (based on a minimum of 10 and maximum of 16 candidates) including all course materials, examination fee and certificate.

Candidates are assessed by a multiple choice examination of 2 hours. The pass mark is 40 out of 60 and successful candidates will receive a certificate.

Level 4 Award in Managing Food Safety in Catering (Advanced level)

This is a 5 day course designed for senior managers and food business owners of who require a more in-depth knowledge of food hygiene control measures. The price per person will be £300 (based on a minimum of 10 and maximum of 16 candidates) including all course materials, examination fee and certificate.

Candidates are assessed by single examination session consisting of 2 examination papers. Paper 1 will comprise of a 30 question multi-choice examination and paper 2 will consist of a choice of 5 from 6 written questions to be answered in 2 ½ hours.

Level 2 Award in Health and Safety in the Workplace

This is a one day workshop providing candidates with knowledge of the basic Health and Safety practices that are essential in the workplace. This includes the hazards and risks presented in the workplace along with the relevant legislation. For further information about this course please visit Highfield ABC website. Level 3 Award in Health and Safety in the Workplace

This is a 3 day workshop and is intended principally for those who are operating in a supervisory or managerial role. For further information about this course please visit Highfield ABC website. Training Venues - It is intended that training will be carried out in your own workplace or at the Council Offices in Bolsover subject to room availability. Any external room hire would have to be paid for by the business or added to the course fees. Refreshments - Training at the council offices: tea, coffee, water and biscuits will be provided during registration, and comfort breaks. Please note that in order to keep prices down, you should bring along your own packed lunch and other snacks.

  • Training in your workplace: it is expected that the business will supply tea, coffee etc during registration and comfort breaks at their own expense.
  • Training at an external venue: any costs for refreshments provided by the venue must be paid for by the business.

Cancellations - In the event of any circumstances beyond our control, Bolsover District Council reserves the right to cancel or amend any course. Delegates will be notified in advance. Places will be allocated on a ‘first come-first served’ basis. An email or confirmation slip will be sent to confirm your place. Cancellations must be made in writing or by email at least 7 working days prior to the course.

Please be aware that you are not obliged to use Bolsover District Council as your training provider as other organisations locally may be able to provide similar services.
